Recipe: Moroccan Chicken

Here’s a first… I’ve never posted a recipe before, but we’re having some new friends over for supper tonight and this is always the meal I make for people the first time they visit.

(Serves 4)

1 1/2 lbs. boneless chicken breasts cut into chunks

2 T oil

1/2 c chopped onion

1 clove minced garlic

2 c salsa
Herdez brand is my favorite. Hot if your guests can handle it, medium if not

1/2 c water

1/4 c currants or raisins
I prefer raisins and put at least 1/2 c in

2 T honey
Use a bit more to sweeten it up a bit

1 1/2 t cumin

1 t cinnamon

1/2 c toasted slivered almonds

Directions:
Brown chicken chunks in oil; place in baking dish.

Saute onion & garlic; spoon over chicken.

Combine salsa, water, currants/raisins, honey, & spices. Pour over chicken.

Cover & bake 1 hr at 325 F. Sprinkle with almonds.

Serve over rice (mixed with black beans)
