We will have the first Raspberries of the season at The Market this week! Here is a Raspberry Dressing that is easy to make and tastes great served on a bed of local greens.
1/2 cup fresh raspberries
1 cup extra virgin olive oil
2 tablespoons balsamic vinegar, or to taste
Place the raspberries, olive oil, and balsamic vinegar in a blender. Cover, and blend until smooth, about 1 minute. Refrigerate until ready to use. Stir or shake before using.
